Lemon Icebox Cookies



  1. In a food processor pulse flour and 10x sugar, salt and lemon zest. Add butter pieces and process to a coarse sand like appearance. Add egg yolks and juice from lemon. Mix till it all comes together.
  2. Divide dough in half and form a 1 ½ inch log from each half. Wrap in plastic wrap and freeze until firm (about 2 hrs) or until you need to bake some cookies.
  3. Preheat oven to 350, roll log in some granulated sugar and slice the cookies about ¼ inch thick. Lay them on a parchment lined cookie sheet and bake for about 15 minutes until cookies are slightly brown around the edges. Cool on a wire rack.
