Oven temp - 350
Mix the first three ingredients. Line a cookie sheet with parchment paper. Scoop the mixture with an ice cream scoop onto the parchment paper, leaving an inch between cookies. Bake until they begin to show some golden color, about 12 to 15 minutes. Cool completely on parchment. Dip the bottom of each cookie in melted chocolate, then place back on the parchment and refrigerate to harden chocolate. Once hardened, chocolate will stay firm at room temperature.
