Lemon Icebox Cookies
Ingredients
- 2 cups flour
- 1 cup confectioner's sugar
- 1 teaspoon coarse salt
- Zest of one lemon
- Juice of half the lemon
- 1 cup butter cut into pieces
- 2 lg. egg yolks
- ¼ cup granulated sugar for rolling cookies in
Instructions
- In a food processor pulse flour and 10x sugar, salt and lemon zest. Add butter pieces and process to a coarse sand like appearance. Add egg yolks and juice from lemon. Mix till it all comes together.
- Divide dough in half and form a 1 ½ inch log from each half. Wrap in plastic wrap and freeze until firm (about 2 hrs) or until you need to bake some cookies.
- Preheat oven to 350, roll log in some granulated sugar and slice the cookies about ¼ inch thick. Lay them on a parchment lined cookie sheet and bake for about 15 minutes until cookies are slightly brown around the edges. Cool on a wire rack.
