Lemon Lime Tea Cakes
Ingredients
- ½ stick of butter at room temp
- 2/3 cups sugar
- 1 teaspoon grated lemon zest
- 1 teaspoon lemon juice
- 1 teaspoon lime zest
- 1 teaspoon lime juice
- 2 eggs
- 1 cup flour
- ¼ teaspoon coarse salt
Instructions
- Preheat oven 350
- Lightly spray mini muffin tins with pam
- In large bowl beat butter and 2/3 cup sugar
- Add lemon and lime zest and beat till fluffy
- Add juices and eggs
- Turn mixer to low and add flour and salt beat well
- Divide batter among muffin cups (about 1 Tablespoon)
- Bake cakes about 15 minutes (test for doneness)
